TEMPEH SATAY SKEWERS WITH PEANUT SAUCE

Ingredients
For the satay skewers:
• 200 g plain tempeh
• 1 tbsp soy sauce
• 1 tbsp lime juice
• 1 clove of garlic, finely chopped
• 1 tsp maple syrup or honey
• 1 tsp curry powder
• ½ tsp turmeric
• 1 tbsp neutral oil
For the peanut sauce:
• 3 tbsp peanut butter
• 150 ml coconut milk
• 1 tbsp soy sauce
• 1 tsp maple syrup or honey
• 1 tsp lime juice
• 1 small clove of garlic, finely chopped
• Optional: a little chili to taste
To serve:
• Fresh cilantro
• Lime wedges
• Roasted peanuts
Preparation
- Prepare the tempeh: Cut the tempeh into long strips and thread them onto wooden skewers.
- Make the marinade: Mix together the soy sauce, lime juice, garlic, maple syrup, curry powder, turmeric, and oil. Brush the marinade onto the skewers and let them marinate for at least 20 minutes.
- Prepare the peanut sauce: Combine the peanut butter, coconut milk, soy sauce, maple syrup, lime juice, and garlic in a small saucepan and heat over low heat. Add a little water if needed until the sauce is creamy.
- Grilling: Grill the tempeh skewers on the grill or in a grill pan on all sides for about 8–10 minutes, until they develop nice roasted flavors. Brush with the remaining marinade occasionally.
- Serving: Serve the satay skewers with peanut sauce and garnish with cilantro, lime wedges, and chopped peanuts.
