TEMPEH BREAD WITH HUMMUS
Tempeh recommendation: Black bean tempeh rosemary-lemon
When you’re in a hurry: crispy fried tempeh, creamy hummus and fresh rocket on toasted bread. A simple, hearty dish for when you’re really peckish – ready in just a few minutes and made with ingredients you’ll usually have at home anyway.

Ingredients
- 200 g tempeh
- 4 slices of hearty bread, e.g. sourdough
- 4 tbsp hummus
- 2 handfuls of rocket
- 6 cherry tomatoes, halved
- rapeseed oil
- 1 tsp lemon juice
- salt and pepper
Preparation
- Toast the bread: Toast the slices of bread or brown them briefly in a dry frying pan.
- Fry the tempeh: Slice the tempeh. Heat a generous amount of rapeseed oil in a frying pan and fry the tempeh on both sides until golden brown.
- Assemble the sandwiches: Spread hummus on the slices of bread. Top with rocket and cherry tomatoes and drizzle with a little lemon juice.
- Serve: Place the fried tempeh on the sandwiches, season with salt and pepper to taste, and serve straight away.
