Ingredients
- 200 g natural tempeh
- 1 small zucchini
- 1 red bell pepper
- ½ red onion
For the marinade:
- 2 tbsp soy sauce
- 1 tsp tomato puree
- 1 tsp maple syrup or agave syrup
- 2 cloves of garlic, finely chopped or pressed
- 1 tsp apple cider vinegar or lemon juice
- 2 tbsp neutral oil
- ½ tsp paprika powder (sweet)
- Pepper to taste
Preparation
- Cut the tempeh into large cubes.
- For the marinade, mix all the ingredients together in a bowl. Add the tempeh cubes, mix well, cover and leave to marinate overnight in the fridge.
- The next day, cut the zucchini and bell pepper into similarly sized pieces and roughly slice the onion.
- Thread the tempeh and vegetables alternately onto wooden or metal skewers. (Wooden skewers should be soaked in water beforehand so that they do not burn on the grill).
- Grill the skewers on the barbecue over a medium heat for approx. 8-10 minutes until everything is nicely browned. For even more flavor, turn occasionally and brush with the remaining marinade.
