FITNESS BOWL WITH TEMPEH
Tempeh recommendation: Soybean Sesame Garlic

Ingredients
- 200 g sesame garlic tempeh
- 150 g basmati rice
- 400 g broccoli (cut into florets)
- 40 g walnuts or peanuts, roughly chopped
- 1 tbsp oil for frying
For the sauce:
- 2 tbsp soy sauce
- 1 tbsp maple syrup or agave syrup
- 1 tsp sesame oil (optional)
- 1 tbsp rice vinegar or lemon juice
- 1 clove of garlic, chopped
- 1 tsp cornstarch + 2 tbsp water
- optional starch for thickening
Preparation
- Cook the rice according to the package instructions.
- Blanch the broccoli in lightly salted water for 3–4 minutes, drain, and rinse with cold water.
- Cut the tempeh into strips and fry in a pan with oil until golden brown all over.
- For the sauce, mix together the soy sauce, maple syrup, sesame oil, vinegar/lemon juice, garlic, and cornstarch-water mixture. Add to the pan with the tempeh and simmer, stirring, until the sauce thickens.
Toast the nuts in a small pan without oil. - Assemble the bowl: put the rice in bowls, arrange the broccoli and tempeh on top, pour the sauce over it, and sprinkle with the toasted nuts.
