        Ingredients

        • 200 g sesame garlic tempeh
        • 150 g basmati rice
        • 400 g broccoli (cut into florets)
        • 40 g walnuts or peanuts, roughly chopped
        • 1 tbsp oil for frying

        For the sauce:

        • 2 tbsp soy sauce
        • 1 tbsp maple syrup or agave syrup
        • 1 tsp sesame oil (optional)
        • 1 tbsp rice vinegar or lemon juice
        • 1 clove of garlic, chopped
        • 1 tsp cornstarch + 2 tbsp water
        • optional starch for thickening

        Preparation

        1. Cook the rice according to the package instructions.
        2. Blanch the broccoli in lightly salted water for 3–4 minutes, drain, and rinse with cold water.
        3. Cut the tempeh into strips and fry in a pan with oil until golden brown all over.
        4. For the sauce, mix together the soy sauce, maple syrup, sesame oil, vinegar/lemon juice, garlic, and cornstarch-water mixture. Add to the pan with the tempeh and simmer, stirring, until the sauce thickens.
          Toast the nuts in a small pan without oil.
        5. Assemble the bowl: put the rice in bowls, arrange the broccoli and tempeh on top, pour the sauce over it, and sprinkle with the toasted nuts.
